Soup and Salad


Yes, it was soup and salad for dinner tonight.

The soup I've blogged about before, Potato Cheese Chowder, a filling hearty soup! And a romaine salad with pears, apples, cashews and poppyseed dressing.




My daughter wants the computer so recipes to follow later!

Winter Fruit Salad with Lemon Poppyseed Dressing

1/2 cup white sugar
1/2 cup lemon juice
2 teaspoons diced onion
1 teaspoon Dijon-style prepared mustard
1/2 teaspoon salt
2/3 cup vegetable oil
1 tablespoon poppy seeds
1 head romaine lettuce, torn into bite-size pieces
4 ounces shredded Swiss cheese
1 cup cashews
1/4 cup dried cranberries
1 apple - peeled, cored and diced
1 pear - peeled, cored and sliced

In a blender or food processor, combine sugar, lemon juice, onion, mustard, and salt. Process until well blended. With machine still running, add oil in a slow, steady stream until mixture is thick and smooth. Add poppy seeds, and process just a few seconds more to mix.
In a large serving bowl, toss together the romaine lettuce, shredded Swiss cheese, cashews, dried cranberries, apple, and pear. Pour dressing over salad just before serving, and toss to coat.

Potato Cheese Chowder

2 medium potatoes
2 1/2 cups water
2 chicken boullion cubes
1/2 cup finely chopped green pepper
1/2 cup finely chopped green onion
1 T butter
1 cup cheddar cheese grated
chopped parsley
1 cup medium white sauce(1 cup milk, 1/4 cup butter, 1 tsp salt. Melt butter, blend in flour and salt, cook gently until bubbly. Add milk gradually, cook, stirring constantly until mixture is thick and smoooth.)

Boil unpeeled potatoes in water until semi soft. Prepare white sauce, drain potatoes saving 1 1/4 cup water, dissolve chicken cubes in hot potato water. Cool potatoes, peel and dice finely. Saute green onion and pepper in butter, add to white sauce. Add boullion mixture to white sauce, stir constantly for 5 minutes. Then simmer for 5 more minutes over low heat. Add cheese, stit until melted. Stir in potatoes, heat slowly over low heat for 5 more minutes. Serve very hot garnished with parsley.
